Get to know our Chefs

Rocky has been in the culinary world for just about 30 years. He attended the California Culinary Academy in San Francisco. He was on the opening team of the Lodge at Torrey Pines in La Jolla, California, a AAA 5 Diamond property. He also is a wine enthusiast. He has managed tasting rooms in California and brings his deep knowledge of wine to Kara’s. Rocky has been in Bend for almost two years and started working as the House Chef and Culinary Director of Kara’s Kitchenware in 2021. He leads and manages all of Kara’s Kitchenwares’ cooking classes, wine dinners and special events.

Q&A with Chef Rocky

What’s your favorite cuisine to cook? 

Mexican because I just love the flavor profile and the comforting ingredients.


What’s your essential cooking tool to have in the kitchen?

Breville Smart Oven Air Fryer Pro. I literally use it every day. You can throw a cast iron pan in and let it get super hot, then sear a steak. You can make anything in it and I couldn’t live without it. 

How did you get into cooking?

I’ve cooked all my life;  starting with working in coffee houses and finally deciding to  go to culinary school in San Francisco.  After culinary school, I worked my way around California from San Diego to the Sierra Foothills, before settling in Bend.

Who are your Chef inspirations?

Julia Child, of course and James Beard

What’s your favorite ingredient to cook with?

Rocky’s Pie Dough Recipe

 Ingredients:
– 540 grams all-purpose flour
– 2 teaspoons salt
– 1 1/2 tablespoons sugar
– 114 grams cold shorting
– 255 grams cold butter cut into small cubes
– About 1 cup ice water
 
Process:
– Place dried ingredients and sugar in food processor bowl and pulse to combine
– Add shorting and pulse until incorporated
– Add butter, making sure to break up pieces
– Pulse until butter is reduced in size and mixture feels coarse
– Add about 1 cup water and run processor just until dough comes together (You may need to add a bit more water to get it to the proper consistency)
– Remove from bowl, place on floured surface, then knead together
– Separate dough into two flat round disks and wrap in plastic wrap
– Chill in refrigerator for at least three hours, best to let it rest overnight
